I'm so in love with these protein pancakes! I finally perfected the recipes, so I've been making them every Saturday. It took me at least 3-4 tries to settle on this paticular recipe. I've also tried using greek yogurt instead of milk, omitting the oats, and sweetening the cakes with stevia. I definitely didn't get good results with those ingredients.
Ingredients:
3 egg whites
1/4 cup coconut flour
1/4 cup oats
1 heaping tbsp of protein powder (Right now I'm using Vegan protein, chocolate flavor)
1/4 cup of vanilla coconut milk
Dash of cinnamon
Drop of vanilla extract

Directions:
1. Heat a large pan over medium heat; spray with cooking spray or a melt teaspoon of coconut oil (I recommend the coconut oil, it makes the pancakes crispier.)
2. Combine all of the ingredients in the a blender, and blend until smooth. I usually turn on the blender for at least a minute and a half. One thing I realized the first few times I made the pancakes is that the batter needs to be smooth. If it's chunky, the final product has a weird texture.
3. Pour the batter into the hot skillet, and cook each pancake for 1-2 minutes on each side.
